Let’s face it, a gourmet breakfast isn’t a realistic goal for a varsity student. Not with those 07:45’s that is. However, a lack of time doesn’t mean we should have a boring breakfast every day or skip breakfast all together. Here are some fun and fresh on-the-go ideas for the most important meal of the day:
1. Peanut Butter and Banana Smoothie
Smoothies are perfect for when you’ve pressed your snooze button one too many times and only have five minutes to get breakfast. Just blend a banana or two, peanut butter, milk, yogurt and some ice cubes.
2. Microwave Berry-Oat Muffin
Mix up oats, an egg, some berries, some brown sugar and a drizzle of milk in a cup and pop it in the microwave for a minute. Quick, easy and yummy!
3. Fruit Ring Pancakes
Take a slice of fruit (apple or pineapple works well), dip it in basic pancake batter and fry until golden brown over medium heat.
4. Avocado and Egg Cups
Take an avocado, slice it in half and hollow out the middle. Add an egg to each of the halves and pop it in the oven or microwave until the egg is cooked. Add desired seasoning.
If all else fails, making a P&J sandwich or grabbing a fruit are the easiest alternatives on the list.
